Pork, Chicken and Apricot Pie
The ultimate picnic pie! Even though it's been a weird weather week with spontaneous snow in London as well as jumper-less days of sunshine, it's gradually getting to picnic season and that makes me happy. This pie is simply gorgeous, especially when you cut through the crisp pastry to reveal colourful stripes inside.
I love the combination of layers; salty pork rich with bacon, tender chicken and juicy apricots bursting with sweet fruity flavour. It is surprisingly straight-forward to make too. Hot water crust (pastry made with lard) is the most forgiving of pastries, as you work with it when it's warm and can easily patch up any holes. After that, the filling goes straight in, the pastry lid goes on and it bakes for a few hours whilst you forget all about it. So simple!
